The Dilly Bag Event Reports

Dale lives an active life with attendance at numerous events, workshops, displays, school presentations, and community functions.

Please also see the sections on "Current Events" and "Workshops" for more detailed information.

Of major importance are the Annual "Nice College of Hospitality Bush Tucker Weeks" held in Nice, France, and which involve some of the top Chefs and Chef Training organisation in France.

The first of these was held in 2004, and this was so successful that it was repeated in 2006, and again in February, 2007.

Nice College of Hospitality:
October 2004"Bush Tucker" Week
During the February 2002 Nice Carnival tour with the Nunukul Yuggera Wantama Aboriginal Dance Troupe, Daniel Abad of Hanson Advisory Services (HAS) held a series of meetings with Mr. Michel Prosperi, Director of the Nice College of Hospitality and Mr. Jean-Paul Gravelle, the Director of Operations.

Discussions at these meetings centred on staging a series of "Bush Tucker" awareness sessions and restaurant services at the Nice College. These activities were directly aimed at the French Riviera’s:
Hospitality Industry representatives
Wholesale Food suppliers and importers
Corporate Identities
Local and State politicians
Hospitality students and instructors
Dining public

The College subsequently proposed a "Bush Tucker" program with the following activities:
An official opening day to include a Gala Banquet for 150 of the City’s Dignitaries, Hospitality industry representatives and Corporate leaders. The program also featured "Bush Tucker" static displays, and practical workshops:
A series of training lectures and practical demonstrations, for the Colleges students and instructors
A "Bush Tucker" menu for the Nice Dining public for a three-day period in one of the Colleges three training restaurants.

Mr. Gravelle has been involved in Hospitality and training for over 25 years. During that time he has developed an extensive Industry network in France and other parts of Europe and he believed that this project would receive wide support and interest from all the targeted areas.

This program was also conceived to encourage the French hospitality industry and public to discover the unique "Bush Tucker" flavours and include them in their everyday use.

 


Conference/Display Venue

This project has involved the following people:
Dale Chapman, a well-known Aboriginal Chef from the Sunshine Coast who has provided her Dilly Bag "Bush Tucker" catering and instructional services for a number of years. She has also conducted an extensive number of "Bush Tucker" awareness programs to schools and community centres.

 


Nice, French Riviera

While in Nice, Dale has introduced the French Hospitality industry to "Bush Tucker" flavours and trained a number of French cookery teachers and students in this area. She has also conducted a number of practical workshops, presentations and organised static displays.

John Wrench a retired senior pharmacist from the Royal Brisbane Hospital has assisted Dale and participated in all the activities during that time. He has also conducted a series of workshops on Bunya nut and tropical forest fruits during that week.
 




 


John is currently involved in numerous environmental projects around the Brisbane region and has developed a close working relationship with a large number of Aboriginal communities and individuals. He also conducts Bush Tucker training and educational programs in and around Brisbane.

Daniel Abad of Hanson Advisory Services coordinated and managed every aspect of the program. Daniels involvement and knowledge of the hospitality industry in Australia and France and his close association with various groups of the Indigenous community over the last five years has ensured the success of this project.

Daniel was also responsible for all liaison and translation services during the program. Daniel has developed a strong network with the Nice City Council, the Education and Vocational Training department, the Hospitality industry, Art galleries, museums and the Agriculture department.

This program was staged during the French national Semaine du Gout (Week of Flavours). This yearly event celebrates food, flavours and the pleasures of the table. Staging the program during that week has, according to Mr. Gravelle, attracted a high level of interest and coverage from the French Media.

This program will undoubtedly have a vast number of direct professional and commercial opportunities for Dale and Daniel.

It will now allow them to:
Generate commercial revenue for a number of Indigenous communities and Bush Tucker food suppliers looking for overseas markets for their products.
Expand and further develop new "Bush Tucker" training activities
Work with renowned French Chefs
Learn new cookery techniques, trends and methods
Deliver additional "Bush Tucker" awareness programs throughout France

According to Dale and Daniel, The Nice "Bush Tucker" event has been a very successful activity and the outcomes of this project are very exciting and encouraging.

They are currently considering the following offers:
Mr Paul Obadia, the Directeur General of Nice Expo who attended the banquet on the 13th October has formally invited Hanson Advisory Services and The Dillybag to attend and participate at the Nice 2006 AGECOTEL. AGECOTEL is a Hospitality Industry Salon culinaire event that is staged every 2 years at the Palais de Expositions in Nice. The next AGECOTEL will take place between the 5th and 8th February 2006.

Mr. Obadia would like Australia and its Bush Tucker foods to be the feature event of the 2006 AGECOTEL. Prior to the event, over half a million invitations featuring Australia and its Bush Tucker foods as a draw card for the event will be mailed to the Hospitality Industry in France, Belgium, Germany, Monaco, Italy and Spain.

Mr. Obadia has also proposed that an Australian "Bush Tucker" restaurant be run during the 4 days of AGECOTEL to allow the visiting Hospitality industry to sample these new flavours. He has also proposed to run an invitation only banquet one evening during AGECOTEL.

Mr. Jean Paul Gravelle, the Director of Operations at the Nice College is very keen to become involved with this proposal and has subsequently offered the use of his college facilities, teachers and students for all the above events.

Mr Christian Morisset a renowned French Chef who also attended the banquet and one of the workshops on the 13th October has been extremely impressed with the Bush Tucker flavours and has agreed to be a guest Chef of Honour during the event and do a series of presentations in conjunction with Dale during the 4-day event. He has also agreed to become involved and participate in any additional promotional "Bush Tucker" activities in France and Europe. This proposal has also received the full approval of Mr. Jean-Claude Mari, the Nice Deputy Mayor.

After the resounding success of the Nice event, Mr. Jean Paul Gravelle, the Director of Operations at the Nice College is also very keen to duplicate the 2004 Nice activities throughout the colleges of Hospitality in France. He has proposed an up to 3-month tour of France that would cover 12 regions and 24 cities. Mr. Gravelle is currently studying the logistics of this new project prior to making a firm proposal.

Mr. Jean-Claude Mari, the Nice Deputy Mayor has proposed an Australian year in Nice between September 2006 and August 2007. During that period a number of events would be staged to highlight, market and promote Australia in its various forms such as:
* Indigenous culture in all its forms
* Trade
* Tourism
* Education
* Photography
* Art
* Music
* Fashion

Both Dale and Daniel are currently planning their new assault on French soil and Europe with the rest of the world to follow.
